It all started when Tom and Katherine Gray opened a small retail shop at their home in Patterson, New York. Long days and a meticulous smoking process produced wonderful gourmet meats, cheese and fish. It wasn’t long until the Grays were operating one of the best wholesale smokehouses in New York.
It took only five years for the family business to expand into a larger facility. The new production facility allows Tom to produce more of his famed gourmet smoked products, while never compromising the unique process upon which his reputation was built. Now, HudsonValleySmokehouse.com has become the exclusive web based retail distributor of Tom’s product, bringing this attention to detail and superb mix of gourmet products to the retail marketplace.
Recently, Mountain Products Smokehouse has been able to offer Organic meats along with traditional products. All of our Organic meats are NOFA (Northeast Organic Farmers Association) Certified. At the time of this writing, we believe that we are the only producer of Certified Organic Smoked Products in the Northeast. The Certified Organic seal ensures that our products are farmed and processed organically. This means no animal cruelty, no use of pesticides or chemicals and processing that eliminates artificial or harmful ingredients.

It starts with high quality meats and fish, and ends with processing the “old fashioned way”. This means that our meats are purchased directly from high quality sources that have proven themselves over the years. For example, the pigs we use for bacon are specifically bred for that purpose and result in a meatier, thinner and more lean end product. In addition, all our fish, is FDA certified.
About our Processing. . .
We don’t rush Mother Nature. All our meats, and fish, are slow smoked, resulting in less shrinkage and a more moist and tender product, enhancing the flavor. We don’t pump up the meats with water or phosphates, nor add scraps or fillers of any kind. Our meats, and fowl are hand boned, and not formed or rolled.
